At the first Thanksgiving in 1621, the Pilgrim settlers and their Native American friends shared a bountiful feast of wild vegetables, fish, and game. Legend has it that among the meats served that day was turkey, which was destined to go from the Pilgrims’ table into the pages of American history. Over the years, this bird became the symbol of Thanksgiving’s spirit of sharing and togetherness.

Turkey – along with its culinary companions: stuffing, pumpkin pie, and cranberry sauce – is a firmly entrenched part of the American Thanksgiving tradition. The versatile bird is usually roasted, but can also be made into soup, used to fill a casserole, or even formed into meatballs. Also lauded for its nutritional value, turkey is low in cholesterol, high in protein, and, therefore, offers a healthy alternative to red meat.

火鸡──以及和牠一块烹调的东西:填料、南瓜派、和蔓越莓酱──是美国感恩节传统里根深蒂固的一部份。火鸡的用法很广,通常用烤的,但也可以做汤,做成砂锅,或甚至做成肉丸子。火鸡的营养价值也很受推崇,胆固醇低、蛋白质高,所以可以做为替代红肉的健康选择之一。

 

Appreciation of this well-loved bird has given rise to debate over the origin of the word “turkey.” Some say the name is derived from the clucking “turk, turk” sound made by male turkeys. Another school of thought holds that the name came about because the turkey’s head resembles a Turkish fez. Regardless of the origins of its name, to Americans, the turkey is a vital part of giving thanks for all life’s blessings.

因为大家都欣赏广受喜爱的火鸡而导致「火鸡」这个词的源起众说纷纭。有人说这词是因为公火鸡「咯,咯」的叫声而得名。另外一派人士认为名字的来源是因为火鸡头与土耳其毡帽很相似。无论名字的源起为何,对美国人而言,火鸡是表达对生活福份感恩的重要象征。

M: I’m so nervous about having my whole family over for Thanksgiving dinner!

G: Don’t worry. We’ve got my grandmother’s recipe for turkey and all the fixings.

别担心。我们已经有奶奶的火鸡食谱和各种配料【注】。

 

M: Gravy, stuffing, rolls – we’ve got lots of works to do! The turkey will take the longest to cook, so let’s start with that.

卤汁、填料、面包卷──我们有很多事要做!火鸡要花的时间最长,就从这项开始着手吧。

 

G: OK. First, pull out the giblets. Then rinse the bird with water inside and out.

M: Yuck! Giblets are gross. But they do make for tasty gravy.

G: Next, rub oil over the bird to keep it moist in the oven.

M: How long should the turkey bake?

G: Allow 35 minutes per kilogram. For our 9-kilogram turkey, about five hours at 165o Celsius should do it.

M: Oh, I forgot to tell you. My cousins aren’t coming because they’ve all got the flu.

G: That means we’ll have plenty of leftovers.

M: Having leftovers is my favorite part of Thanksgiving. My family always ate turkey sandwiches for days after Thanksgiving.

G: My favorite part of the Thanksgiving turkey is the wishbone. After it dries, we’ll pull it to see which one of us gets a wish.

M: Well, my wish is that our Thanksgiving dinner goes off without a hitch!
