Raising my chopsticks and spoon, I put the rich-tasting mixture of noodles, broth and beef into my mouth. The chewy beef is perfectly matched with the soft hand-rolled noodles. The combination creates a symphony of taste in my mouth. This is my first bite of braised beef noodles, but definitely not my last.

For centuries, Taiwanese people viewed eating beef as an insult to the hard-working oxen, which were essential to agriculture. This attitude changed after Taiwan got its first taste of beef noodles in 1949. Chinese Nationalists sought refuge in Taiwan and earned a living by setting up noodle stalls and selling dishes from their hometowns. This had a real impact on the national diet as beef noodles began to be enjoyed by every level of Taiwanese society.

Stewed beef noodles have a light but flavorful broth, while braised beef noodles feature a darker broth and an even richer taste. Fans of beef noodles often put their own spin on them by adding interesting ingredients, such as sauerkraut, chili peppers or curry. Another way to eat beef noodles is to have it “dry,” without any soup.
