People in Taiwan enjoy outdoor barbecues with family during the Mid-Autumn Festival, but people in Texas fancy great barbecue year round. As you bite into some ribs served on butcher paper at a Texas barbecue joint, the meat can either melt right off the bone or be dry but savory. Barbecue didn’t originate in Texas, but the state has arguably the tastiest and most tender barbecued meat in America.

每年中秋节期间,台湾的民众总是与家人一起享受户外烤肉的乐趣,不过,在德州的人间,可是一整年都渴望着大啖香喷喷的烤肉。当你在德州的烤肉餐厅咬下用厚纸包裹着的肋排,这肉不是入口即化,就是干爽可口。烤肉并非原自德州,但德州毋庸置疑拥有全美最美味且肉质最软嫩的烤肉。

 

Texas is blessed with four styles of tasty barbecue, but the Eastern and Central are the most popular. Eastern Texas barbecue is known for its chopped beef and pork sandwiches, and sweet, tangy sauce. However, the emphasis of the Central Texas barbecue style is on the meat, which is hickory smoked for hours, making it tender and flavorful.

德州得天独厚地拥有四种风味不同的美味烤肉,而其中最夯的是东部和中部式烤肉。德州东部的烤肉以香甜酱汁搭配碎牛肉及猪肉三明治而闻名。然而,德州中部烤肉的特色,则是强调耗费数个钟头,以山核桃树枝慢火烟熏而来,软嫩且风味颇佳的肉。

 

Regardless of the style, slow heat without direct contact with flames is the difference between Texas barbecue and the grilling done in other places. With the specific culinary ingredients and skills needed, making Texas barbecue is difficult and time-consuming. However, these efforts can result in the Lone Star State’s famous, unique and mouthwatering flavor.

不论是哪一种风味,德德州烤肉与其它地方碳烤不同之处在于小火慢烤及不直接接触到火焰。在制作上,需要独特烹调材料与技术的德州烤肉是非常困难且耗时的。然而,这些所费的功夫得到的结果便是「孤星之州」著名、独一无二、且令人垂涎三尺的美味。
