Are you in the mood for something a little different on your plate? How about an edible menu you can tear up to make alphabet soup, or a photograph of a cow that tastes like a steak? If the thought of them is making your stomach rumble – or at least arousing your curiosity – then head to Moto, an upscale Chicago restaurant.

 

想要来点不一样的餐点吗?可以撕碎做成字母汤的可食用菜单,或是一张尝起来像牛排的牛排照片如何?如果这些想法让你饥肠辘辘—或者至少引起你的好奇心—那么就出发前往位于芝加哥一家名为「魔多」的高级餐厅吧!

 

The mastermind behind the Asian-influenced avant-garde cuisine at Moto is twenty-eight-year-old Chef Homaro Cantu. Cantu believes that cooking must catch up with the evolution in technology. And he’s not just talking about the cooking tools. One of Cantu’s most popular creations, for example, is maki, a type of sushi roll. Cantu’s maki “tastes” exactly like those served at other upscale Japanese restaurants. The difference is that Cantu uses an inkjet printer (filled with organic, food-based inks) to print images of maki onto pieces of edible paper. He then flavors the paper with powdered soy and seaweed seasonings. Voila – twenty-first-century sushi!

Cantu wants dining at Moto to be a great art experience, like going to the opera. Though not everyone, especially gourmets, appreciates his creations, Cantu’s avant-garde cuisine has won many fans. Many are eager to know just how far he will be able to go mixing technology and food. The answer may be found in Cantu’s latest experiments with liquid nitrogen and helium. Don’t be surprised if one day you see a dish floating by in the air.
