It can be thick and soft, loaded with gooey cheeses, or thin and crispy, crumbling with every tasty bite. All around the world, there are thousands of different ways to serve and enjoy pizza. It is an iconic symbol of both American and Italian culture, and a surefire bet for anyone looking for a simple, delicious meal.

The recipe for pizza seems easy enough, but it is an idea that developed slowly over thousands of years. The earliest known pizzas were the rounded “bread-plates” used by the Etruscans, ancient forerunners of the Romans. The Greeks, with their advanced baking and technical skills, developed the idea further, adding olive oil and cheese. They developed the pizza crust, originally as a way to keep the toppings from sliding off oily treat. The Greeks also pioneered the kneading technique so essential to the pizza-making process, originally as a way to make the rough dough more palatable.

Christopher Columbus’s discovery of the Americas led to the introduction of tomatoes, and soon the classic “Neapolitan pizza” with cheese and tomatoes was taking Europe by storm. When a noted pizza chef was commissioned to bake a pizza for Italy’s Queen Margherita, he used mozzarella cheese, tomatoes and basil in homage to the Italian national flag. The classic “margherita” was born, and with it came the age of the modern pizza.

The international pizza craze truly started after World War II. American soldiers who had been stationed in Italy began to return home, and they brought with them a yearning for the tasty Italian pizza they had feasted on during their time away.

国际间的披萨狂热在二次大战后才真正开始。曾驻扎在意大利的美国士兵陆续返家;由于离家时饱尝美味的意大利披萨,士兵们回家后也渴望再度吃到这种美食。

 

Pizzerias began to spring up across America, and soon major U.S. cities began to develop styles for their own. New York pizzas are known for being heavy and greasy, while in Los Angeles pizza has become a gourmet item, incorporating fancy add-ons like salmon and duck on top of a traditional cheese-and-tomato base. All American pizzas are known for being loaded with toppings. Early European pizzas were mostly just cheese and tomato creations, sometimes topped with an occasional eel or anchovy. American pizzerias turned these light dinners into meat-laden delicacies, packed from crust to crust with every add-on imaginable.

Not surprisingly, this more indulgent version has proved popular internationally, and today pizza can be found around the world, incorporating countless regional specialties. In Korea, for example, pizzas are made with kimchi and bulgogi, while Japanese pizzas are made from a crust of pounded rice, and sometimes topped with squid ink instead of tomato sauce. Just as Americans took this age-old Italian recipe and turned it into something uniquely American, other cultures around the world are using pizza to express their own culinary tastes. Any way you slice it, pizza is a dish for everyone to enjoy.
