The practice of barbecuing for the Moon Festival in Taiwan, originally promoted by BBQ sauce companies in TV commercials, is now widespread. Unless care is taken, though, barbecuing can be a particularly unhealthy way of cooking, contributing to the risk of cancer. Not only that, but barbecuing is also a cause of serious air pollution. On Moon Festival, collective barbecuing produces the same amount of carbon monoxide pollution as half a day’s driving. The problem is so severe that local governments in Taiwan actually discouraged people from barbecuing during last year’s festival.

台湾人在中秋节烤肉的习惯原本是烤肉酱公司在电视广告里强打的活动,现在则已是非常普遍的全民运动。但除非很小心,否则烤肉可能会是很不健康的一种烹调方式,甚至会导致罹癌风险。不仅如此,烤肉也是造成空气污染严重的原因之一。中秋节当天,家家户户烤肉时产生的一氧化碳污染,相当于半天的汽机车废气排放量。这问题非常严重,所以其实在去年过节时,台湾地方政府已经劝导民众不要烤肉。

 

For those who simply must include grilled meat in their festivities, here are some guidelines that can help you enjoy the holiday and still stay healthy. First, make sure to thoroughly clean your grill before you start. Next, use less fatty cuts of meat, and apply BBQ sauce before cooking them in a metal pan at a lower temperature. Fatty meat, dry cooking over a direct flame, and high heat can all lead to the formation of carcinogens – cancer-causing compounds – in the meat. Plus, eating leaner meat naturally leads to a leaner you. You should also make sure to grill some vegetables, say, peppers, onions, and corn on the cob. These can add low-fat nutrition as well as a wider range of flavors to your meal.

而对那些非得在节庆活动中品尝烤肉不可的人来说,这里倒是有些参考原则让你既能欢度佳节,同时又可保持健康。首先,烤肉前先确定已经彻底清洗烤肉架。接着,选用油脂较少的肉品,且在烤肉前先涂抹烤肉酱,再放上金属烤盘低温烧烤。选用肥肉、直接以火干烤及高温,都可能导致致癌物质(一种会引发癌症的化合物)在肉里形成。此外,吃瘦一点的肉自然也会让你变得比较瘦。所以,一定也要烤些蔬菜,像是青椒、洋葱及带梗的玉米等。这些可以为你的餐点增添一些低脂的养分及更多样的风味。

 

Of course, to really improve our health and the environment, we need to make more changes in our everyday habits. The Moon Festival might be as good a time as any to make a start.
